The Paloma is Mexico's favourite cocktail. Tequila, grapefruit, lime, something sparkling. It is the drink of long afternoons and unhurried evenings. It does not try too hard.

The earthy brightness of Original Maté replaces the grapefruit soda. What you get is something a little wilder, a little more grounded, with the clean finish of mate where the sweetness would usually be. It works because it does not fight. The tequila and the mate understand each other.

The Recipe
Makes one drink
50ml blanco tequila
Half a lime, juiced
Half a can of Matelo Original Maté chilled
Ice
A slice of lime or a wedge of grapefruit to finish
How to Make It
Fill a tall glass with ice.
Pour the tequila over the ice. Add the lime juice.
Top slowly with Matelo Original Maté. Do not stir. Let it settle for a moment.
Finish with a slice of lime or a wedge of grapefruit on the rim.
Drink it outside if you can.
A Note on the Tequila
Use a blanco. Something clean and unfussy. The mate is doing flavour work here and a heavily aged tequila will muddy it. Let the mate be the interesting part.
